Instructions

  1. Cook Beetroot until soft , drain , peel and cut into small cubes

  2. Keep one Beetroot for garnish

  3. Slice into +- 3mm slices, deep fry until crisp, place on paper towel to dry

  4. Heat oil in pot

  5. Add Ginger , Garlic sautée and Beetroot cubes

  6. Stir well

  7. Add Stock and bring to boil

  8. Blend very finely

  9. Add Coconut milk , season to taste and chill ( must not be too thin)

  10. Spoon into suitable bowl garnish with whipped Cream and Beetroot Chips

  11. Serve
