TACOS WITH COLESLOW AND REFRIED BEANS

Ingredients
  • 6 Taco shells
  • 1 can Black Beans (drained)
  • 2 Carrots (grated finely)
  • 1/8 Cabbage (finely sliced)
  • 100 ml Lime Olive Dressing (ready made)
  • 1 Avocado
  • 50 grams Grated Cheese (Pecorino)
  • 5 Onions (finely chopped)
  • 1 tablespoon Fresh Coriander (finely chopped)
  • 3 ml Lime Juice (or Lemon)
  • 1/2 Garlic Glove (finely chopped)
  • 50 ml Canola Oil
Instructions
  1. Heat Oil in suitable pot

  2. Sauté Onions until transparent before adding Beans

  3. In bowl mix Carrots and Cabbage , pour lime dressing over mix (or Mayonnaise if no dressing available)

  4. Peel and mash Avocado very finely , add Onion, Coriander, Lime juice and Garlic , mix , season to taste

  5. Place Coleslaw in Taco shell (½ full)

  6. Spoon hot refried Beans on top

  7. Garnish with Guacamole and Cheese 

  8. Ready to serve
