THAI VEGETABLE CAKES

Ingredients
  • 100 grams Carrots (peeled)
  • 500 grams Potatoes
  • 1 Baby Leek
  • 2 to 3 Taco Shell
  • 60 grams Cheese (grated)
  • 3 grams Ginger
  • 2 grams Garlic
  • 1 gram Paprika
  • 1 gram Chili Powder
  • 2 grams Coriander
  • Salt, Pepper
Instructions
  1. Grate Carrots finely

  2. Peel Potatoes and cut into cubes and cook until soft

  3. Cut Leeks into small cubes

  4. Crush Tacos very finely, like a bread crumb

  5. Chop Ginger, Garlic, Coriander very finely

  6. Drain Potatoes and put back into pot and mash finely

  7. Fold in Carrots, Leeks, Ginger, Garlic, Paprika, Chilli Powder, Coriander and Cheese mix well

  8. Add Taco crumbs, mix and form little cakes +- 80 gr each

  9. Fry in deep fryer or shallow pan

  10. Serve with sauce of your choice (Sweet Chilli)
