
Green Asparagus Soup

Cut Asparagus into 1-inch pieces, trim the ends , keep for garnish

Heat oil and sauté Garlic

Add Asparagus pieces sauté

Add stock and let simmer for +- 40 Minutes until very soft and tender

Cook Asparagus spears until soft, keep warm.

Blend Asparagus very fine, season to taste and serve hot

Spoon Hollandaise on top and garnish with Asparagus spears
